Ingredients
1-1/2 cups crunchy flake cereal
1/2 cup chocolate chips
1/3 cup peanut butter (or almond butter)
2 Tbsp. sugar
1/2 tsp. vanilla extract
1 tsp. ground cinnamon
Pinch of salt
Toppings (optional)
Chocolate chips
Cacao powder
Cacao nibs
Shredded coconut
Chopped nuts
Hemp seeds
Directions
- Prepare a muffin pan with paper liners and set aside.
- In a small saucepan over low heat, add chocolate chips, peanut butter, sugar and salt and heat 2-3 minutes, or until chocolate begins to melt.
- Add cereal to saucepan and stir to combine and coat cereal with chocolate.
- Add vanilla and cinnamon. Stir to incorporate.
- Using a spoon, add dollops of chocolate-cereal mixture to paper muffin liners.
- Sprinkle desired toppings over top each dollop. Experiment with different toppings.
- Refrigerate cereal bites for 30 minutes, or until firm.
