  1. Preheat oven to 425.
  2. In 12-inch cast iron skillet on medium heat, melt butter, stirring near continuously, until it begins to become light brown. Remove from heat.
  3. Add carrots and garlic to skillet and toss so all are coated.
  4. Stir in honey, salt, pepper, thyme and sage.
  5. Roast in oven 25-30 minutes, or until carrots are soft.
