We’re hooked on this flavorful fish dinner. Delicately seasoned grouper is seared to flaky perfection and served with mushroom and asparagus-loaded pearl couscous. Though it’s a meal fit for any high-end restaurant, this well-rounded dish is simple to cook and comes together in less than half an hour. If grouper isn’t available, try swapping it for your favorite white fish.

Pan Seared Grouper & Pearl Couscous

Ingredients

Instructions

  1. In medium pot, bring chicken stock and salt to boil. Stir in bay leaf, couscous and butter; cover. Simmer 8 to 10 minutes, stirring occasionally.
  2. Meanwhile, in large pan, warm olive oil. Sauté mushrooms and asparagus. Roughly chop cooked ingredients. Remove bay leaf from couscous; stir in mushrooms and asparagus tips.
  3. Season both sides of grouper with salt and pepper. On cast iron skillet or frying pan over medium-high heat, cook 4 minutes per side.
  4. Serve fish over couscous. Garnish with orange and lemon slices.
