Gluten-Free Banana Pancake Bites with Buttery Citrus-Honey Glaze

Servings 30 pancake bites

Ingredients

Pancake bites

Buttery citrus-honey glaze

  • 1/4 cup butter softened
  • 1 Tbsp. honey
  • Zest from 1 orange

Instructions

  1. Preheat oven to 400 degrees F. In bowl, combine all pancake bites ingredients. Note: Some banana chunks may remain.
  2. Spoon mixture into mini muffin tin. Bake for 10 minutes.
  3. In the meantime, in bowl, whip all buttery citrus-honey glaze ingredients together.
  4. Let pancake bites cool slightly, drizzle with buttery glaze and serve.

  • Use silicone mini muffin mold to easy remove pancake bites from pan.
