Gluten-Free Banana Pancake Bites with Buttery Citrus-Honey Glaze
Pancake bites
- 1 cup all-purpose gluten-free flour
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1 Tbsp. honey
- 3/4 cup low-fat milk
- 1 Tbsp. ghee (softened)
- 1 egg
- 1 ripe banana (mashed)
Buttery citrus-honey glaze
- 1/4 cup butter (softened)
- 1 Tbsp. honey
- Zest from 1 orange
- Preheat oven to 400 degrees F. In bowl, combine all pancake bites ingredients. Note: Some banana chunks may remain.
- Spoon mixture into mini muffin tin. Bake for 10 minutes.
- In the meantime, in bowl, whip all buttery citrus-honey glaze ingredients together.
- Let pancake bites cool slightly, drizzle with buttery glaze and serve.
- Use silicone mini muffin mold to easy remove pancake bites from pan.
- Add a sprinkle of freshly chopped basil or rosemary on top for a summery flavor to complement the citrus.
