Ingredients
- 2 lbs. baby carrots ends chopped, or large carrots (cut to less than 1-inch thick)
- 1/4 cup olive oil
- 1 Tbsp. minced garlic
- Salt to taste
- Pepper to taste
- Olive oil cooking spray
- Fresh parsley
- 2 oz. shaved parmesan cheese
Instructions

Preheat oven to 400 degrees F.

In bowl, toss carrots with olive oil, garlic, salt and pepper.

On baking sheet with cooking spray, arrange carrots.
