These roasted parmesan garlic carrots are both easy and elegant; a perfect side dish that goes with anything. They’re welcome on a holiday table with baked ham, with a quick weeknight chicken dinner or in a vegetarian feast. Carrots for the win – again!

Parmesan & Garlic Roasted Carrots

  1. Preheat oven to 400 degrees F.
  2. In bowl, toss carrots with olive oil, garlic, salt and pepper.
  3. On baking sheet with cooking spray, arrange carrots.
  4. Roast for 20-25 minutes, until tender.
  5. Sprinkle on parmesan and parsley before serving.
