Parmesan & Garlic Roasted Carrots

  • 2 lbs. baby carrots (ends chopped, or large carrots (cut to less than 1-inch thick))
  • 1/4 cup olive oil
  • 1 Tbsp. minced garlic
  • Salt to taste
  • Pepper to taste
  • Olive oil cooking spray
  • Fresh parsley
  • 2 oz. shaved parmesan cheese
  1. Preheat oven to 400 degrees F.
  2. In bowl, toss carrots with olive oil, garlic, salt and pepper.
  3. On baking sheet with cooking spray, arrange carrots.
  4. Roast for 20-25 minutes, until tender.
  5. Sprinkle on parmesan and parsley before serving.
