This version features sugar-free apple cider vinaigrette and roasted pumpkin seeds for extra crunch.   1. In large bowl, combine veggies, cilantro and pumpkin seeds. Gently fold in avocado.
  2. In small bowl, whisk together dressing and pour over veggie mixture. Stir to combine.
  3. Cover and chill until serving to allow flavors to blend.
  4. Serve as dip. To make a complete meal, serve with chicken, fish or quinoa.
