Tomato sauce is great, but this creamy red bell pepper sauce will elevate your favorite pasta or homemade pizza dish to the next level. This recipe is a quick one – should take around 10 minutes to prepare for a quick week-night meal. Feel free to use store-bought roasted bell peppers, or prepare them fresh (directions for both included). Blend all the ingredients together, pour over your favorite type of pasta, garnish with fresh herbs and serve!

Instructions

  1. If using fresh bell peppers, preheat oven to 400 degrees F. Roast bell peppers until skin is completely blackened. Transfer roasted bell peppers to bowl with lid to trap in heat. Once cool, remove skin and seeds. If using store-bought roasted bell peppers, start with step two.
  2. In blender, combine all ingredients (except the pasta) and blend until sauce is smooth. Tip: Add more pasta water to thin sauce if needed.
  3. Pour sauce over hot pasta and cook over medium heat until sauce slightly thickens, about 2 minutes.
  4. Garnish with extra basil and plant-based “parmesan” to serve.
