Apple-Cinnamon Waffles With Vegan Brown Butter

This easy recipe artfully combines apple pie flavors into rich vegan waffles that sing of the season. Take an extra five minutes to brown your vegan butter for added nutty depth that pairs perfectly with cinnamon, clove, walnuts and apples. Serve these as part of a memorable brunch or make them for dessert and top with a scoop of vanilla nice cream and a drizzle of vegan caramel sauce. Apple Cinnamon Vegan Waffles

Apple-Cinnamon Waffles With Vegan Brown Butter

  • 1-½ cups gluten-free flour
  • ½ cup oat flour
  • 1 Tbsp. baking powder
  • ½ tsp. baking soda
  • 1 tsp. cinnamon
  • ½ tsp. ground cloves
  • 2 Tbsp. apple butter
  • 2 Tbsp. chopped walnuts
  • 1 Tbsp. flax meal (plus 3 Tbsp. water)
  • 2 Tbsp. brown cane sugar
  • 1-¼ cups plant-based milk
  • ½ cup plant-based butter
  • 1 apple (small dice)
  1. Lightly grease waffle maker and set to low heat.
  2. In large bowl, combine sifted flours, cinnamon, cloves, baking soda and baking powder.
  3. In small bowl, combine flax meal and 3 tablespoons water to create flax egg. Let sit to gel.
  4. In another bowl, whisk together diced apples, oat milk and sugar. Add flax egg and whisk to combine.
  5. In pot or deep pan on medium heat, heat butter, stirring with wooden spoon, until it begins to foam, smell nutty and turn light brown.
  6. Pour brown butter into wet mixture and whisk well.
  7. Incorporate all wet mixture into dry mixture, mixing at continuous pace until smooth and creamy.
  8. Pour ¼ cup batter into waffle maker and cook until done. Repeat until all batter is used.
