As far as simple, healthy breakfasts go, it’s hard to top avocado toast. But you’ll need to pack in more flavor to make it really memorable. This buffalo hummus really takes your toast up a notch (or several notches, if we do say so ourselves), and you’ll have plenty left to kick other meals or snacks into high gear. After spreading a tablespoon or two on your bread and adding avocado, drizzle on vegan ranch dressing (plus extra hot sauce if you dare!), for a spicy twist on toast that will make even non-vegans’ mouths water.

Spicy Avocado Toast with Buffalo Hummus & Vegan Ranch

Ingredients
Buffalo Hummus
- 15 oz. can Vitacost Organic Garbanzo Beans
- ¼ cup Vitacost Organic Tahini
- ⅓ cup lemon juice
- 2 cloves garlic minced
- 1 Tbsp. lemon zest
- 3-4 Tbsp. buffalo sauce
- 1-2 Tbsp. hot sauce adjust to taste
- 1 tsp. lemon pepper seasoning
- ¼ tsp. black pepper adjust to taste
- Salt to taste
Toast
- 1 small avocado thinly sliced
- 2 Tbsp. vegan ranch dressing
- 2 slices bread toasted
- Green onions or chives to top
Instructions

In food processor or blender, combine all hummus ingredients until smooth, stopping to scrape down the sides as needed. If mixture is too thick, add water by the tablespoon to thin. Taste and adjust seasonings as needed.

Spread desired amount of buffalo hummus on each slice of toast.

Gently fan out sliced avocado on each slice.

Top toast with ranch and green onions or chives. Season to taste.
