Ingredients
Farro
- 2 cups farro
- 4 cups water
Salad
- 1 lb. sliced strawberries
- 2 oz. fresh basil torn
- 1/2 cup sliced almonds toasted
Dressing
- 2 Tbsp. minced shallot
- 2 Tbsp. lemon juice
- 1 Tbsp. balsamic vinegar
- 1 Tbsp. honey
- 1 tsp. Dijon mustard
- 1/2 tsp. salt
- 1 tsp. poppy seeds
- 1/2 cup light olive oil
Instructions

In pot over high heat, bring farro and water to boil. Reduce heat and simmer until tender, about 30 minutes. Drain and rinse thoroughly. Store chilled until ready to use.

To make dressing, use a blender or food processor to combine all ingredients except oil. Once mixture is smooth, slowly stream in oil until creamy and emulsified.

To assemble salad, toss farro, strawberries, almonds and dressing. Add basil and gently toss. Serve chilled or at room temperature.
