Vegan Sweet Potato Brownies

just set the brownies on the dessert table? But now your container contains just a few crumbs. Brownies have a way of disappearing like that! And this better-for-you version is
no exception. “Secret” sweet potato mixes with almond butter, cocoa powder, maple syrup and chocolate chips to create moist, flavorful (and
nutritious!) treats with no need for flour, egg or processed sugar. Topped with salted almonds to balance the sweetness, these fudgy squares will disappear in minutes. There’s no resisting brownie bliss.
Vegan Sweet Potato Brownies
- 1 medium sweet potato (roasted and peeled)
- 1 cup smooth almond butter
- 1/2 cup maple syrup
- 1/4 cup cocoa powder
- 1/2 cup semi-sweet chocolate chips
- 1/4 cup sliced almonds
- Pinch sea salt
- Preheat oven to 350 degrees F.
- In large bowl, mash cooked sweet potato.
- Stir in almond butter, maple syrup and cocoa powder. Combine well. Stir in 1/4 cup chocolate chips.
- Into large baking dish, pour batter and bake for 35-40 minutes or until toothpick inserted in center comes out clean. Let cool.
- In saucepan, melt 1/4 cup chocolate chips, then spread evenly on cooled brownies. Top with a sprinkle of sliced almonds and a pinch of sea salt.
