Ingredients
- 1 cup sushi rice
- 1 medium sweet potato
- 7 oz. tofu sliced
- 1/2 cup coconut aminos
- 1 large avocado quartered
- 1 cup arugula
- 1/2 cup vegan cream cheese
- 2 Tbsp. chives finely chopped
- 4 Nori sheets
Instructions

Preheat oven to 400 degrees F.

Bake sweet potato for 1 hour.

Set sweet potato aside to cool, then slice it into 4 pieces.

Cook rice according to package instructions.

Slice tofu into 4 pieces (one for each sandwich).

Marinate tofu in coconut aminos for 30 minutes.

Heat medium pan over medium heat. Cook tofu for 3 minutes per side, until golden.

Spread cream cheese onto Nori sheet.

Layer with arugula, rice, tofu and sweet potato.

Fold the sides toward the center, flip the sandwich over and slice in half.

Repeat for all sandwiches.
