1 cup oat flour or rice flour
¼ cup smooth, unsalted peanut butter
2 bananas
Directions
- Preheat oven to 325 degrees F. Line a baking sheet with parchment paper.
- In a large bowl, mash peanut butter and bananas. Add in oat flour and mix until combined. (This might work better if you add the flour in two separate batches.) Use your hands and form dough into a ball. Chill for about 20 minutes.
- On a floured surface or sheet of parchment paper, roll dough out to 1/3- or 1/2-inch cut out desired shapes and transfer to prepared baking sheet. Poke each cookie in the center with a fork, to allow steam to vent.
- Bake for 25-30 minutes.
