Ingredients
- 1 cup cauliflower florets steamed
- 1 cup broccoli florets steamed
- ½ cup zucchini shredded
- 2 eggs
- 1/2 cup organic feta cheese
- 1 Tbsp. nutritional yeast
- 1 tsp. smoked paprika
- 1 tsp. garlic powder
- Salt and pepper to taste
- 1 cup organic all-purpose flour
- 1 lemon
- Avocado oil
Instructions

In large bowl, add shredded zucchini and cooked cauliflower and broccoli florets. Using a fork or potato masher, smash and combine ingredients.

Add all other ingredients, saving flour until the end, and mix well.

In nonstick frying pan, heat oil over medium heat.

Using a wet tablespoon, scoop fritters into frying pan and cook until golden brown, around 4 minutes on each side.

For serving, squeeze fresh lemon juice on top of the fritters.
