Instructions

  1. In large bowl, add shredded zucchini and cooked cauliflower and broccoli florets. Using a fork or potato masher, smash and combine ingredients.
  2. Add all other ingredients, saving flour until the end, and mix well.
  3. In nonstick frying pan, heat oil over medium heat.
  4. Using a wet tablespoon, scoop fritters into frying pan and cook until golden brown, around 4 minutes on each side.
  5. For serving, squeeze fresh lemon juice on top of the fritters.
  6. Enjoy with fresh side salad.
