Ingredients
Waffles
- 1 box Simple Mills Chocolate Muffin & Cake Mix
- 1/4 cup water
- 1 Tbsp. instant coffee or espresso
- 1/4 cup canola oil
- 2 tsp. vanilla extract
Drizzle Sauce
- 1/4 cup maple syrup
- 1/2 cup cocoa powder
- 1/2 cup coconut oil
- 1 Tbsp. water
- 1 Tbsp. instant coffee or espresso
Ice Cream
- 1 pint vanilla ice cream
- 1 pint coffee ice cream
Instructions
Waffles

In microwave or small saucepan, heat ¼ cup water and add instant coffee or espresso. Stir until combined.

To large bowl, add eggs, canola oil and vanilla. Whisk until combined.

Add chocolate muffin mix and mix well. Slowly mix in coffee or espresso.

Preheat waffle maker. When ready, add a heaping tablespoon of batter to each slot and cook according to instructions. Repeat until batter is gone.
Drizzle Sauce

Heat small saucepan to medium heat. Add water and instant coffee or espresso and stir until combined. Add coconut oil, cocoa powder and maple syrup. Stir often until all components are combined.
Assembly

Add drizzle sauce to two waffles. Scoop ice cream onto waffle, add more sauce and top with second waffle.
