Southwest Quinoa Salad

Ingredients

Salad

Dressing

  • 2 Tbsp. olive oil
  • ½ tsp. salt
  • ¼ tsp. pepper
  • 1 tsp. ground cumin
  • 1 tsp. chili powder
  • 1 clove garlic crushed
  • ½ cup cilantro chopped
  • 2 Tbsp. lime juice
  • 2 tsp. lime zest

Instructions

  1. Cook quinoa according to package directions.
  2. In large bowl, mix together dressing ingredients.
  3. In same bowl, toss in quinoa, corn and black beans. Mix until coated.
  4. Serve warm or chilled.
