This easy recipe is here to help our pale cruciferous friend shine with a bright, fresh makeover. Dill, parsley, spinach and lemon dress up frozen riced cauliflower with a boost of mouthwatering flavor. Swap out more carb-heavy potatoes or rice with this downright cheerful side dish.

Lemon-Herb Riced Cauliflower

Ingredients

Instructions

  1. Thaw frozen cauliflower rice and squeeze out excess moisture using dish towel, cheesecloth or nut milk bag.
  2. In sauté pan over medium heat, combine olive oil, salt, pepper, garlic powder and cauliflower rice. Sauté for 5 minutes.
  3. Add dill, parsley, spinach, lemon zest, lemon juice and additional tablespoon of olive oil. Sauté for 5 more minutes. Serve warm.
