S’mores are loved and legendary, but you don’t always have the space or inclination for a crackling outdoor fire. These donuts bring the favorite flavor combination indoors in a donut-meets-campfire mash-up. Fluffy, moist and dairy-free, these baked treats come together with a silky chocolate glaze and a topping of crushed graham crackers and toasted marshmallows. Unearth that little-used crème brûlée torch and fire these up!

Ingredients

Chocolate glaze

  • 2 cups powdered sugar sifted
  • 2 Tbsp. cacao powder
  • 1 tsp. vanilla extract
  • ¼ cup almond milk

Instructions

  1. Preheat oven to 375 degrees F. Spray 6-well donut pan with cooking spray.
  2. In mixing bowl, whisk together milk and apple cider vinegar. Let sit for 2-3 minutes before whisking in oil and vanilla.
  3. In separate bowl, sift together flour, cocoa powder, baking powder, baking soda, sugar and sea salt.
  4. Stir dry ingredients into bowl with wet ingredients until just combined and batter is thick and smooth, about 2-3 minutes.
  5. Spoon batter into piping bag and pipe into prepared pan, filling wells about 3/4 full.
  6. Bake 10-13 minutes or until inserted toothpick comes out clean.
  7. Remove from oven and cool for 5 minutes before transferring to rack to cool completely.
  8. In wider, shallow bowl, whisk together powdered sugar, cocoa powder, almond milk and vanilla until smooth. (Note: For thicker glaze, add additional powdered sugar 1 Tbsp. at a time until desired consistency. For thinner glaze, add additional milk 1 Tbsp. at a time until desired consistency.)
  9. Dip each donut into glaze and set on rack. Sprinkle on crushed graham crackers.
  10. Place marshmallow on each donut. Using kitchen torch, toast each marshmallow before serving.
