			Ingredients
Fritters
- 2 cups Eden Foods Organic Black-Eyed Peas cooked, drained
- 1 medium red onion chopped
- ½ cup Pamela's Products Gluten-Free All-Purpose Flour Mix
- ½ tsp. Simply Organic Garlic Salt
- ½ tsp. Simply Organic Onion Powder
- ½ tsp. Simply Organic Paprika
- 1 tsp. Simple Truth Italian Seasoning
- Redmond Salt to taste
Other
- California Olive Ranch Olive Oil for frying
- Sour cream dairy or vegan, optional topping
Instructions
- 
										In food processor, pulse together all fritter ingredients until dough forms.
- 
										Place dough in mixing bowl. Using hands, divide into small balls and press to flatten each ball into patty. (Note: If dough is too sticky, oil hands before forming patties to prevent dough from sticking.)
- 
										In skillet over medium heat, heat oil and cook patties 2-3 minutes or until both sides are golden-brown.
- 
										Serve fritters as is or with sour cream of choice.
Note:
- 
										Store fritters in airtight container in refrigerator for 3-4 days or freeze 2-3 months.
