Ingredients
Dry
- 1 tsp. Himalayan salt
- 2 cups all-purpose flour
- 1/2 cup super fine almond flour
- 3 tsp. baking powder
Wet
- 1/2 cup avocado oil
- 1 tsp. vanilla extract
- 1/2 cup sugar
- 1 tsp. almond extract
- 1 cup pitted cherries
- 1/2 cup vegan Greek yogurt or almond milk yogurt
- 1/2 cup water
- 1 Tbsp. apple cider vinegar
Fold in Batter
- 1 cup diced cherries
Optional: Chocolate chips
Instructions

Preheat oven to 400 degrees F.

Sift all-purpose flour, almond flour, salt and baking powder. Set aside.

In high-speed blender, add one cup cherries. Blend then strain in fine mesh colander. Save puree and juice separately and set aside.

In small bowl, combine sugar, avocado oil, vanilla and almond extract mix. Set aside.

In separate bowl, mix together yogurt and water. Add apple cider vinegar and mix again. Let sit five minutes then add saved cherry juice.

Combine wet and dry ingredients, but do not overmix. Fold in chopped cherries and set aside.

Bake 25-30 minutes. Test for doneness with toothpick until it comes out clean.
Recipe Notes
- Tart cherry juice is an option when adding juice to the muffin mixture.
- To make a sugar-cinnamon-almond crumble topping, add a mixture of cherry chunks, cinnamon, sugar and almond crumbs to top of muffin.
