Chicken Salad with Strawberry-Champagne Vinaigrette

Ingredients

  • 10 oz. salad greens chopped
  • 24 oz. chicken breast cooked
  • 3 oz. crumbled goat cheese
  • 1/2 red onion thinly sliced
  • 4 oz. pepitas
  • 12 large strawberries quartered

Dressing

Instructions

  1. In food processor, blend ingredients for dressing, excluding basil leaves, until well combined. Add basil leaves and pulse until well incorporated.
  2. In large bowl, toss together salad ingredients and dressing.
