Ingredients
- 1 cup whole wheat flour
- 1 cup old-fashioned rolled oats
- 2/3 cup granulated sugar
- 1-1/2 tsp. baking powder
- 3/4 tsp. baking soda
- 1/2 tsp. kosher salt
- 3 Tbsp. coconut oil melted
- 1 cup coconut milk
- 1 egg room temperature
- 1 cup shredded coconut
Instructions

Preheat oven to 350 degrees F. Grease a 9x5-in. loaf pan with cooking spray.

In large mixing bowl, combine flour, oats, sugar, baking powder, baking soda and salt.

In separate bowl, whisk together coconut oil, coconut milk and egg.

Add wet ingredients to dry ingredients and stir until just combined. Fold in coconut.

Transfer batter to prepared pan and bake for 40 to 45 minutes or until toothpick comes out mostly clean.

Cool in pan for 5 minutes and then transfer to wire rack to cool to room temperature.
