This gluten-free Easter rendition includes a layer of Simple Mills almond flour crackers soaked in a butter and brown sugar mixture, then baked and topped with vanilla frosting. Colorful sprinkles and sprouted pumpkin seeds add a touch of spring to this festive recipe. Switch out the frosting for chocolate and sprinkles for walnuts and you have a year-round dessert recipe.

Instructions

  1. Preheat oven to 400 degrees F and line baking sheet with parchment paper.
  2. Place crackers on baking sheet to form a rectangle and set aside.
  3. In small saucepan, melt butter and brown sugar over medium heat. Stir regularly and bring to boil for 2 minutes.
  4. Pour mixture over crackers and spread using spatula.
  5. Bake 6 minutes and let cool.
  6. Spread frosting onto toffee and garnish with pumpkin seeds, sprinkles and candies.

  7. Chill until frosting sets.
  8. Break into pieces and share.
