Dessert Tacos with Tropical Fruit & Coconut Glaze

Tacos for dessert? You bet! Admittedly, these dessert tacos a little different from the ones you’d serve for dinner. Instead of beans, chicken or shrimp, these tortillas are stuffed with bananas, mangos, strawberries and kiwis. To top it off, a light vanilla-coconut glaze is drizzled over the fruit for a treat that’s sweet, satisfying and guilt-free.

Tropical Dessert Tacos with Coconut Glaze

Ingredients

Tacos

  • 3 flour tortillas
  • 1 cup cubed mango
  • 1 cup quartered strawberries
  • 1 cup sliced banana
  • 1 cup sliced kiwi
  • 2 Tbsp. fresh mint leaves cut larger leaves in half

Glaze

Instructions

  1. In small bowl, whisk together glaze ingredients. Cover and store in fridge while cutting fruit or preparing tacos.
  2. Fill tortillas with assorted fruit and fresh mint.

  3. Drizzle each taco with 2 Tbsp. glaze.
  4. Serve immediately.
