Ingredients
Muffins
- 1 cup eggnog or half & half
- 2 eggs
- 1/4 cup butter melted
- 1-3/4 cups gluten-free 1-to-1 baking flour
- 1 cup sugar
- 2 tsp. baking powder
- 3/4 tsp. ground nutmeg
- 1/2 tsp. salt
- 1 tsp. vanilla extract
- Optional: 1/2 tsp. bourbon, rum or rum extract
Streusel
- 1/4 cup gluten-free 1-to-1 baking flour
- 2 Tbsp. butter melted
- 1/4 cup sugar
- 1/2 tsp. ground nutmeg
Instructions

Preheat oven to 375 degrees F. Add liners to muffin tin.

In small bowl, combine flour, sugar and nutmeg for streusel topping. Add melted butter and mix until crumbly. Set aside.

In large bowl, whisk together eggnog or half & half, eggs, melted butter, vanilla extract and optional bourbon, rum or rum extract.

In medium bowl, combine flour, sugar, baking powder, ground nutmeg and salt.

Add dry ingredients to wet ingredients. Stir until evenly combined.

Pour batter into muffin tin. Sprinkle on streusel topping.
