Vegan Flourless Chocolate Beet Cake

Ingredients
Cake
- 1 cup unsweetened cocoa powder
- 1 cup 85% dark chocolate chips
- 4 beets boiled, pureed
- 1/4 cup extra virgin olive oil
- 1/2 stick soy-free vegan butter like Miyoko’s brand
- 2 chia/flax eggs
- 1-2 Tbsp. vanilla
- 1 tsp. monkfruit or stevia, optional

Instructions

Preheat oven to 350 degrees F. Grease cake pan.

In mixing bowl, combine cocoa, pureed beets, oil, vegan butter, chia/flax “eggs,” vanilla and optional sweetener.

Gently fold in chocolate chips.

Transfer batter to cake pan. Smooth out top.
