Gluten-Free Biscuit Apple Cobbler

Fall isn’t really fall without apple cobbler. To really elevate your season, try this twist on the old favorite. Instead of a thick crust, these spiced and caramelized apples are topped with fluffy, buttery gluten-free biscuits. Does the addition of biscuits mean this dish is suitable for breakfast? Maybe – we won’t judge! But if you really want to kick it up a notch, serve it for dessert à la mode style, topped with vanilla ice cream. It doesn’t get much better than that!

Gluten-Free Biscuit Apple Cobbler

Ingredients

Spiced Apples

Biscuits

  • cups almond flour
  • 1 cup gluten-free oat flour
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • ½ tsp. salt
  • ½ cup cold unsalted grass-fed butter cut into small pieces
  • 1 egg
  • ½ cup plain full-fat Greek yogurt
  • 1 Tbsp. maple syrup

Instructions

  1. Preheat oven to 425 degrees F. Grease 9x13-inch baking dish and set aside.
  2. In large bowl, stir together apples, lemon juice, coconut sugar, cinnamon, nutmeg and ginger.
  3. In large saucepan over medium heat, combine coconut oil and apple mixture. Cook for 8-10 minutes, stirring occasionally, until apples slightly soften and caramelize.
  4. Transfer apples to baking dish. Let cool while preparing the biscuits.
  5. In large, clean mixing bowl, combine almond flour, oat flour, baking powder and soda and salt. Using a pastry cutter, cut butter into flour mixture. (Alternatively, you can grate butter with cheese greater.)
  6. In separate bowl, combine egg, yogurt and maple syrup until smooth.
  7. Pour wet ingredients into dry ingredients and stir to combine.
  8. Use large ice cream scoop and drop about 1/3 cup of biscuit batter on top of cooked apples in three rows, creating 12 biscuits total.
  9. Brush tops of biscuits with melted butter. Bake for 16-18 minutes or until tops are golden brown.
  10. Let cool for 15 minutes before serving.

Recipe Notes

One serving is 1 biscuit with about ½ cup apple mixture.
