Ingredients
- 2 large very ripe bananas or 3 medium size
- 1/3 cup melted vegan butter or dairy butter
- 1/3 cup maple syrup
- 2 tsp. pure vanilla extract
- 2 organic eggs
- 3 Tbsp. plant-based milk or dairy milk
- 1-1/2 cups cassava flour
- 3 tsp. baking powder
- 1/2 tsp. Redmond Real Salt
- 1 Tbsp. poppy seeds optional
- 2 Tbsp. chocolate chips plus more for top
- 1/2 cup hazelnuts chopped
- 10 whole hazelnuts
Instructions

Preheat oven to 360 degrees F. Prepare an 8x5-inch loaf pan with parchment paper.

In large bowl, mash bananas and add eggs, maple syrup, vanilla extract, butter and milk. Mix until completely combined.

In medium-sized bowl, combine dry ingredients: flour, baking powder, salt and poppy seeds. Stir together.

Transfer dry mixture to bowl with wet ingredients. Mix well.

Add chopped hazelnuts and chocolate chips until incorporated.

Transfer mixture to prepared loaf pan. Spread batter into even layer and sprinkle top with whole hazelnuts and some more chocolate chips.

Bake about 50 minutes, or until toothpick inserted in bread comes out clean.
