Triple Berry Pancakes (Gluten, Dairy & Egg-Free)

Servings 12 pancakes

Instructions

  1. In a small bowl, combine milled flaxseed with hot water. Set aside to thicken.
  2. In medium bowl, whisk together coconut oil, flaxseed mixture, maple syrup and milk.
  3. Add pancake mix and whisk to combine.
  4. Preheat a large non-stick pan to medium or medium-low and brush lightly with oil. Scoop out ¼ cup of batter and pour into pan. Sprinkle with chopped breakfast oval.
  5. Cook about 2-3 minutes or until outside is set. Then flip and cook another 2 minutes. Transfer to plate.
  6. Repeat with remaining batter.
