Triple Berry Pancakes (Gluten-, Dairy- & Egg-Free)

Triple Berry Pancakes (Gluten, Dairy & Egg-Free)
- 2 Tbsp. Vitacost Organic Cold Milled Flaxseed
- 6 Tbsp. hot water
- 2 Tbsp. Vitacost Coconut Oil, (melted (or any flavorless oil))
- 2 Tbsp. Vitacost Organic Maple Syrup
- 1 cup dairy-free milk or milk of choice, (room temperature)
- 1 cup Vitacost Gluten-Free Pancake and Waffle Mix
- 2 Enjoy Life Berry Medley Breakfast Ovals, (chopped)
- In a small bowl, combine milled flaxseed with hot water. Set aside to thicken.
- In medium bowl, whisk together coconut oil, flaxseed mixture, maple syrup and milk.
- Add pancake mix and whisk to combine.
- Preheat a large non-stick pan to medium or medium-low and brush lightly with oil. Scoop out ¼ cup of batter and pour into pan. Sprinkle with chopped breakfast oval.
- Cook about 2-3 minutes or until outside is set. Then flip and cook another 2 minutes. Transfer to plate.
- Repeat with remaining batter.
