Gluten-Free Matcha-Pistachio Muffins

			Ingredients
- 1 cup gluten-free all-purpose baking flour
- ½ tsp. pink salt
- 1 tsp. baking powder
- 1 Tbsp. matcha green tea powder
- 2 Tbsp. egg replacer plus ¼ cup water
- ½ cup unsweetened applesauce
- ¼ cup coconut oil
- ½ cup maple syrup
- Shelled pistachios
Instructions
- 
										Preheat oven to 350 degrees F.
- 
										In medium bowl, mix together flour, salt, baking powder and matcha powder.
- 
										Add remaining ingredients (except pistachios) and stir until well combined.
- 
										Into lined muffin tin, pour ⅓ cup batter for each well. Top with pistachios.
- 
										Bake 20 minutes.
