Gluten-Free Matcha-Pistachio Muffins

As it turns out, it is easy being green. These matcha muffins with pistachio are a breeze to make for breakfast or a healthy, pick-me-up snack. The nutty crunch of the pistachios baked on top compliments the soft, fluffy texture as well as the color. Moistened with apple sauce and made sweet with maple syrup, they’re nutrient dense, delightful and just darn pretty!

Gluten-Free Matcha-Pistachio Muffins

Instructions

  1. Preheat oven to 350 degrees F.
  2. In medium bowl, mix together flour, salt, baking powder and matcha powder.
  3. Add remaining ingredients (except pistachios) and stir until well combined.
  4. Into lined muffin tin, pour ⅓ cup batter for each well. Top with pistachios.
  5. Bake 20 minutes.
