Ingredients
- 1 cup Bob’s Red Mill Paleo Flour
- 1 Tbsp. honey
- 1/2 Tbsp. coconut oil
- 1/2 Tbsp. SunButter Organic Sunflower Butter
- 1/2 Tbsp. water
- 1/2 tsp. pure vanilla extract
- ⅛ tsp. sea salt
- Dash baking soda
- 1 bag Hu Gems Dark Chocolate Chunks
Instructions

On plate, arrange 12 mini paper muffin tin liners.

In medium bowl, mix together all ingredients except chocolate. Add 1/3 cup chocolate chunks and combine with hands.

In saucepan over low heat, melt remaining chocolate until liquefied, about 2 minutes.

Spoon chocolate into each cup to fill bottom, top with cookie dough, then cover with more melted chocolate.

Refrigerate 20 minutes until chocolate hardens.
