Ingredients
- 5 cups yellow onion thinly sliced
- 2 Tbsp. olive oil
- 1 tsp. salt
- 1 tsp. agave syrup
- 2 Tbsp. gluten-free flour
- 1 qt. beef broth
- 1 Tbsp. red wine vinegar
- 1/2 cup water
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1/2 tsp. Herbs de Provence or Italian seasoning
- 6 slices gluten-free French baguette or similar toasted
- 6-18 slices thin-sliced cheese Parmesan, provolone, Swiss, Fontina, Gruyere or mozzarella
Instructions

In 5-quart pot on low, heat olive oil and stir in onions. Cover and cook 20 minutes.

Remove cover, turn heat to medium and add salt and agave. Cook 30 minutes, stirring often until onions are browned.

Whisk in flour, beef stock, red wine vinegar and water. Bring to boil then cover and simmer 30-45 minutes.

Remove from heat, add salt, pepper and Herbes de Provence or Italian seasoning to taste.

Pour each serving into ramekins, top with toasted bread and thin slices of cheese.

On a sheet pan, place ramekins and turn oven to broil. Broil until cheese is melted.

Remove from oven and serve. (Note: Be cautious as ramekins are extremely hot.)
