Ingredients
- 16 oz. silken tofu
- 1/2 cup honey
- 1/3 cup coconut oil melted
- 1/4 cup lemon juice
- Zest of 1 lemon
- Cake of choice cubed
- Coconut whipped cream
Instructions

In blender or food processor, combine tofu, honey, coconut oil, lemon juice and lemon zest; blend until smooth and creamy. Add honey to desired sweetness.

Refrigerate mixture for at least 6 hours, or until thick.

In small ramekin or serving glass, layer cake, lemon parfait and whipped cream.
