Instructions

  1. Preheat oven to 350 degrees F.
  2. In large mixing bowl, whisk together eggs and sugar. Add coconut oil and whisk.
  3. Add remaining cake ingredients and stir until combined.
  4. In 5x9-inch loaf pan, pour batter.
  5. Bake 40-45 minutes, until toothpick inserted in center comes out clean. Remove from oven and allow to cool.
  6. For icing, in mixing bowl, whisk together powdered sugar, lemon zest, lemon juice and milk.
  7. Pour icing over cooled pound cake.
  8. Slice and serve.
