Easy Loaded Mashed Potato Casserole

Ingredients

Instructions

  1. In large pot, boil potatoes in water 20 minutes until soft. Drain and mash with coconut oil, cream cheese and spices.
  2. Preheat oven to 375 degrees F.
  3. To 8x8-inch baking pan, spoon mashed potatoes, smooth out and top with shredded cheese. Bake 30 minutes.
  4. Top with chopped bacon and green onions, cut into squares and serve warm.

Recipe Notes

Note: Skin of small potatoes is thin, it can be removed or mashed into this recipe.
