Ingredients
- 2 lbs. small organic potatoes
- 2 Tbsp. coconut oil or butter
- 1/3 cup cream cheese vegan or dairy
- 1 tsp. Celtic salt
- 1/2 tsp. paprika
- 1/4 tsp. black pepper
- 1/4 tsp. onion powder
- 1/4 tsp. garlic powder
- 1-1/2 cups shredded cheese vegan or dairy
- 3 slices bacon cooked and chopped, vegan or pork
- 2 stalks green onions chopped
Instructions

In large pot, boil potatoes in water 20 minutes until soft. Drain and mash with coconut oil, cream cheese and spices.

Preheat oven to 375 degrees F.

To 8x8-inch baking pan, spoon mashed potatoes, smooth out and top with shredded cheese. Bake 30 minutes.

Top with chopped bacon and green onions, cut into squares and serve warm.
