Ingredients
Brownies
- 1 3/4 cups oat flour
- 1 1/2 cups almond flour
- 1/2 cup cocoa powder
- 2/3 cup granulated sugar
- 1/4 cup unsweetened applesauce
- 1/4 cup almond butter
- 3 eggs
- 1 cup almond milk
Peppermint Layer:
- 2 15 oz. cans unsweetened coconut cream
- 1/3 cup honey
- 1/2 tsp peppermint extract
- 4 drops green food coloring
Chocolate Layer:
- 12 oz chocolate chips
- 2 tbsp coconut oil
Instructions

Preheat oven to 350 F.

In mixing bowl, combine all brownie ingredients.

Pour into 9x13 pan.

Bake for 25 minutes. Remove from oven and let cool completely.

While brownies are baking, in a large bowl, combine peppermint layer ingredients.

Pour peppermint layer mixture over brownies.

Place in freezer for at least 3 hours (until peppermint layer is solidified).

In small bowl, add chocolate chips and coconut oil and microwave for 60 seconds. Stir, and microwave for 30 more seconds.

Pour melted chocolate over frozen coconut peppermint mixture and freeze for another 20 minutes (until solidified).

Slice into bars and serve.
Recipe Notes
Tip: Because the brownies will be solid from freezing, heat your knife before slicing, so you can easily cut through the layers!
