										In frying pan over medium heat, heat olive oil and garlic until garlic becomes fragrant.

										Add mushrooms, oregano, salt and pepper. Cook until mushrooms are tender, about 5 minutes.

										Stir in chopped spinach and cook 1-2 minutes until wilted. Remove from heat.
- 
										On one half of the tortilla, spread mushroom-spinach and sprinkle crumbled goat cheese over it. Fold empty side over loaded side.

										Heat a dry frying pan over medium heat. Place folded quesadilla on pan and cook about 2-3 minutes per side, pressing lightly with a spatula, until golden brown and crispy.
