Ingredients

Filling

  • 1 cup raw cashews soaked overnight in water, drained
  • 6 pitted medjool dates soaked overnight in water, drained
  • 1 can (13 1/2 oz.) coconut cream
  • 1 tsp. vanilla extract
  • 1-1/2 to 2 Tbsp. lemon juice depending on preference
  • 1 cup cherries pitted

Topping

  • 2 cups pomegranate seeds
  • 2 cups pitted cherries

Instructions

  1. In food processor, blend together all ingredients for crumble until just combined.
  2. In individual jars, glasses or bowls, evenly distribute crumble to bottom third of container.
  3. In high-speed blender, process all filling ingredients until smooth.
  4. Pour filling over crumble and place jars in freezer to thicken for 3 hours to overnight.
  5. To serve, top with pomegranate seeds and cherries.
