No-Bake Cherry Cheezecake Jars (Dairy-Free)
Crumble
- 1 cup crumbled graham crackers
- 1 cup walnuts
- 12 medjool dates (pitted)
- 1 tsp. sea salt
- 1 tsp. vanilla extract
- 1 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg
- 1 scoop Vibrant Health Green Vibrance Powder
Filling
- 1 cup raw cashews (soaked overnight in water, drained)
- 6 pitted medjool dates (soaked overnight in water, drained)
- 1 can (13 1/2 oz.) coconut cream
- 1 tsp. vanilla extract
- 1-1/2 to 2 Tbsp. lemon juice (depending on preference)
- 1 cup cherries (pitted)
Topping
- 2 cups pomegranate seeds
- 2 cups pitted cherries
- In food processor, blend together all ingredients for crumble until just combined.
- In individual jars, glasses or bowls, evenly distribute crumble to bottom third of container.
- In high-speed blender, process all filling ingredients until smooth.
- Pour filling over crumble and place jars in freezer to thicken for 3 hours to overnight.
- To serve, top with pomegranate seeds and cherries.
