Oven-Baked Carrot-Tomato Meatballs (Gluten-Free)

Everything is better with veggies – including meatballs. Ditching the breadcrumbs and adding carrots, onion and tomato paste not only increases the nutritional value, but it keeps each bite exceptionally tender and juicy. After being baked, the meatballs are stewed in tomato sauce where every bite is infused with bigger-than-life flavor. Enjoy them with low-carb and paleo-friendly greens or spaghetti squash, or with pasta and gluten-free breadsticks.Top View Deep Dish Filled With Meatballs in Sauce | Vitacost Blog
