If you’re impatient for pumpkin, you’ll love this savory pumpkin pasta sauce. Whip up your favorite pasta (any kind will do!) and ladle this sauce over for a soul-warming dish. Add protein on the side to make a complete meal.
Ingredients
1 can (15 oz.) organic pumpkin
1 cup canned chopped tomatoes
1/2 cup coconut cream
1/2 tsp. salt
1/4 tsp. black pepper
1/2 tsp. dried oregano
1/4 tsp. garlic powder
1/4 cup fresh basil, chopped
16 oz. penne pasta (any pasta will work)
Directions
- In medium saucepan, simmer pumpkin and tomatoes. Stir in coconut cream and spices. Cover and simmer about 15 minutes.
- Meanwhile, cook pasta according to package directions.
- To serve, pour 1/2 cup sauce over 1 cup pasta and garnish with fresh basil.
