Ingredients
- 1-1/2 cups all-purpose flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1/2 tsp. dried oregano
- 2 large eggs
- 1/3 cup olive oil
- 1/4 cup plain Greek yogurt
- 1 cup zucchini grated
- 3/4 cup cherry tomatoes chopped
- 1/2 cup parmesan or feta grated
- 2 Tbsp. fresh basil or parsley chopped
- Pinch of red pepper flakes optional
Instructions

Preheat oven to 350 degrees F. Grease or line 9x5 loaf pan.

In large bowl, whisk together flour, baking powder, baking soda, salt, pepper and herbs.

In another bowl, beat eggs, olive oil and yogurt until smooth.

Fold wet ingredients into dry until combined.
