Vegan Pumpkin-Chickpea Burgers

Pumpkin spice is nice, but pumpkin burgers go further! From stacking between two slices of bread to crumbling over pasta or slicing over a salad – you can enjoy these savory patties as a nutritious addition to any meal. All you need is a food processor to combine the following ingredients (most are pantry staples!) and a non-stick skillet to cook ‘em up until golden brown. Pumped for pumpkin burgers? Vegan Pumpkin-Chickpea Burgers

Ingredients

Instructions

  1. In food processor, pulse chickpeas. Add remaining ingredients and continue pulsing until combined. Add additional salt to taste if necessary. Note: Burger mix should be soft.
  2. To form patty, use 1/2 cup mixture and use hands to form. Repeat with remaining mixture.
  3. Heat non-stick skillet over medium. Spray with cooking spray.
  4. Transfer patties to skillet. Cook 5 minutes per side (carefully flip over – burgers will be soft until fully cooked and firm).
  5. Serve on a bun with your favorite condiments and veggies, over a bed of greens or however you prefer your patties!
