Ingredients
- 1 can 15 oz. chickpeas, drained and rinsed
- 1/2 red onion finely chopped
- 2 stalks of celery finely diced
- 1 large carrot shredded
- 1/4 cup vegan mayonnaise
- 1/4 cup sweet relish
- 2 Tbsp. capers optional
- 2 tsp. dried dill
- 2 tsp. Dijon mustard
- 2 tsp. lemon juice
- 1 garlic clove minced
- Vegan butter for grilling bread
- 4 slices of bread any variety
- Vegan cheese sliced or shredded
- Salt and pepper to taste
Optional toppings:
- avocado slices
- tomato slices
- lettuce
Instructions

In large mixing bowl, mash chickpeas with fork.

Add remaining ingredients and mix well.

Over medium heat, preheat frying pan, griddle or panini press.

Spread vegan butter on one side of each of the 4 slices of bread.

On dry side of 2 slices, spread chickpea mixture and top with cheese.

Place second piece of bread on top to close sandwiches, with butter on outside.

Place sandwiches in frying pan press and cook until browned on each side, flipping carefully halfway through.

Remove from heat, cut sandwiches in half and enjoy.
