Coconut-Corn Pancakes

These crispy, rich coconut-corn pancakes are an exotic upgrade from your typical Saturday flapjacks, and the protein powder gives them extra staying powder. Serve with honey, syrup or your favorite nut butter.



  1. Combine all ingredients in a bowl until you get a smooth batter.

  2. Add a dollop of coconut oil to skillet or frying pan.
