					Ingredients
- 4 Tbsp. plant-based butter
 - 1 yellow onion diced
 - 1/2 tsp. Himalayan pink salt
 - 1/4 tsp. ground black pepper
 - 1 celery stick diced
 - 3 garlic cloves minced
 - 1/4 cup all-purpose flour
 - 3 cups vegetable broth
 - 1 cup oat milk
 - 3 cups broccoli florets chopped
 - 1 carrot peeled and diced
 - 8 oz. vegan cheddar cheese
 
Instructions
- 
										In large pot on medium heat, add butter and sauté onion for 5 minutes.
 - 
										Add salt, pepper, celery and garlic and sauté for and additional minute.
 - 
										Add flour and mix carefully for 1 minute. Whisk in vegetable broth, cream, broccoli, carrots and cheese.
 - 
										Cook on low for 8 minutes or until broccoli is tender. Remove from heat and serve warm.
